Ingredients
Main
1 chicken breast (around 150g)
75g Enoki mushrooms
3-4 slices pickled ginger
1/3 cup edamame
1/4 Lebanese cucumber
1/2 large carrot (shredded)
1/2 cup shredded iceberg lettuce
5g light mayonnaise
1 tsp Natural Life Bee Pollen
Marinade
1 tsp sesame oil
1 tbsp soy sauce
1 tsp rice wine vinegar
1 tsp water
1-2cm piece ginger minced
1/8 tsp garlic paste
1 tsp Natural Life Manuka Honey
1/4 tsp cornstarch
Method
Step 1:
Start by drying your chicken breast using paper towel then cut into 2-3cm chunks.
Step 2:
Using a medium bowl start by mixing your marinate ingredients then add your chicken. Cover and place in the refrigerator for 30+ mins.
Step 3:
While you wait preheat oven to 180°C Fan bake and chop your cucumber, carrot and lettuce.
Step 4:
Spray a medium size pan with olive oil and cook your enoki mushrooms until softened.
Step 5:
Cook your edamame and rice as per packet instructions.
Step 6:
Place your chicken on a lined oven tray and bake for 15-20mins or until tender and cooked through.
Step 7:
Assemble your bowl and sprinkle bee pollen granules over your chicken. Top with sesame seeds and mayonnaise. Serve with 1/3 cup cooked white rice for an extra 103 cals
